It’s not often you come accross a sparkling wine with the lees still in the bottle, let alone a Prosecco wine!
Most sparkling wines are disgorged before release so the wine remains nice and clear.
So you won’t find this type of bottle in a supermarket or a wine shop. But I’ve been lucky enough to be sent a bottle by our friends of Azienda Agricola Corvezzo from the Veneto.
Instead of removing the natural sediments that form during and after fermentation, the producer had bottled the wine with its lees, and kept them in there.
I had tasted the Terre di Marca Bio Spumante, the clear version of this wine, so was exciting to open up this one.
