This Pinot Noir wine was made from grapes exclusively harvested by hand, from clay and limestone vineyards in a dozen of localities in and around Hugel’s home village of Riquewihr in Alsace.
The grapes are taken in small tubs to the winery where they are 100% destemmed and macerated for 6 to 7 days. After malo-lactic fermentation, the wine is aged in vats until it is bottled in the early summer following the year of harvest.
The whole production of this wine is closed with Diam cork.
Tasting Notes:
Intense spicy, peppery (black pepper), and herbal aromas.
The fruit flavors are more of a background note rather than a dominant one. Nice acidity, sharp granulous tannins, light body. Grippy finish with a vegetal bitter touch.
Dominant flavors are black and white pepper, strawberry and a floral Violette finish.
