Any thoughts about wine with Chaource? I first tasted the cheese toasted in a salad with pine nuts as a starter in a hotel near Chablis (I think the cheese is from the area – the town of the same name is a few miles South East of Chablis). Then it was paired with a (then) 10 year old Chablis Premier Cru – Fourcahume I think…. and was lovely… However that’s not an everyday wine and “cold”, as a cheese course is a slightly different proposition.
