They are often used to age the wines on lees (sur lattes) at the winery&#039;s cellar, instead of the classic beer taps, which allows the Champagne to &#039;breathe&#039; more during that time, and develop more complexity earlier. This is the way it was done before the more-modern introduction of beer tap seals.]]></description>
