In reply to vinoexpressions. Actually "merde" in that sense means "good luck"- basically the equivalent of "break a leg." You do not say it after the performance but before.

I’ve always brought out a decent red burgundy, pinot noir, with pan fried dick breast, regardless of whether a simple orange reduction or a more complex raspberry red wine balsamic sauce. Always works!

I shared a bottle of this with my wife last Saturday and we both enjoyed it. It’s quite dry and crisp as you’d expect of a low dosage blanc de blancs. I liked the delicate bubbles and fairly complex flavour for a generally light wine. I bought a reasonably priced bottle from Majestic as part of a larger Champagne order.

It’s not a Champagne I expect to drink often but it would make the perfect aperitif for a posh dinner party and I’ll definitely be buying it again.

Julien, I have benefited greatly from your many you tube videos on the correct pronunciation of French wine terms and places. I have often struggled with how to pronounce the Provence appellation and village of Cassis. I have assumed the terminal S is voiced as this is a Provençal village, but others have told me to that it is silent. How do you pronounce this village name and it’s marvelous white wines. Thank you

I find it helpful to know that I should lay wine bottles flat to ensure that the cork would adhere to the wall of the bottle. For Valentine’s Day, a French bistro is offering duck leg, without stating if roasted or what. I am presuming t will be roasted, ad served with potatoes au gratin with mushroom sauce. This bistro has a god wine list, so I expect to choose a really good pairing. Any specific suggestions?
