Fermentation took place in stainless steel tanks at low temperature before a maturation on fine lies of about 5 months.
Tasting Notes
The wine is of a bright lemon-yellow color.
The nose is deep, mixing confit citrus peel (grapefruit, lime and lemon) to a flinty slightly petrol character. The wine takes a little time to open up and reveal its layers of aromas, but you can feel it’s concentrated and complex on the nose.
The palate confirms that impression. It is concentrated in flavors and rather full-bodied. Again, rich ripe hearty citrus fruit characters fill up your senses. They’re combined with plenty of spiciness and a long vegetal feel. Good acidity despite the apparent ripeness of the fruit balances the oily texture and richness well.
The wine is clearly dry but feels warm and welcoming. Here is a distinctive saltiness to the palate that accompanies some salivating phenolics. This combination accentuating the savory feel of the wine from the mid-palate.
Long finish on wax, dried herbs and fresh grapefruit.
Overall
A good ripe and concentrated Sauvignon Blanc from the Loire Valley that expresses the warmth of ripe citrus fruit as well as typical Sauvignon Blanc characters.
This wine is filled with all the character of its terroir, in particular the saltiness distinctive saltiness expressing the genuine personality of Sauvignon Blanc grown on limestone.
