The world of spirits is at least as fascinating and diverse as the world of wines or beers, and often surprisingly so.
Spirits, by nature, concentrate flavours and aromas from their core ingredients through the distilling process. Brandies (the ones from grape fruit at least like Cognac or Armagnac) are nothing else than distilled wine. Whiskies are distilled beer. Calvados is distilled cider.
The worst examples will therefore accentuate and exaggerate faults. The finest spirits however, have often taken many years, if not decades or centuries to refine, in search for the best source of sugar to ferment (fruit for eaux-de-vie, grain for whisky and vodka, agave for Tequila, molasses for Rum), the best distillation process (copper stills, columns), the best vessels for maturation, and the best finishing processes (filtration, resting, barrel-ageing). All around the world, regardless of the type of spirit, the goal is always to reach a smooth, pure and refined expression of an origin, a plant, a country, and deliver maximum pleasure and enjoyment…
